Gabbai's first album, a collection of Hebrew folksongs and dance tunes called "Songs of Old and New Tel Aviv", was released in Israel in 1958. She began recording in German in the mid '60s but also continued recording in Hebrew as well as French and English. In Germany she peaked in 1966 at no. 13 with Winter in Canada and charted twice more in Germany that year. In 1968 she released her second Hebrew album, The New Beat (במקצבים חדשים), which topped the Israeli charts. She remained active in music until the mid 1970s. In 2014 a double CD compilation was released including of the complete contents of both of her Israeli albums plus bonus tracks from her singles and EPs.
