The PRS and GEMA databases list https://en.wikipedia.org/wiki/Al_Gromer_Khan as the composer of the tracks on this album. That would fit with Fricke's description of the release in interviews.

Florian Fricke states that he played harmonium and organ on this album. This album should not be dismissed by those seeking out Popol Vuh's music and LPs as I originally did simply because the music is just so good. Also, the recording, mastering, and vinyl pressing on the PDU label here are top notch.

Truely it was session of Al Gromer Khan (sitar) with the Indian musicians Pandit Sankha Chatterjee (tabla) and Beena Chatterjee (vocals). It seems that only for commercial reasons and without their approvement it was released half-officially and labeled as Popol Vuh album.
So it's Indian music and it's very beautiful and quite listenable even if you are newcomer for this genre.
